Book an organic Buglioni Amarone Valpolicella wine tasting dinner. Tour the cellar and drying loft, then enjoy a 5-course paired meal.
The tour

The history and winemaking philosophy of the Valpolicella Classica region come together at Cantina Buglioni, offering wine lovers an authentic immersion into the traditions of the Veneto countryside. Located in Corrubio di Negarine, this organic estate highlights the dedicated craftsmanship and deep passion required to produce some of the finest red wines in Italy. The journey through this estate begins in the open air among rows of sustainably grown vineyards. Walking through these fields allows visitors to observe the ideal climatic conditions and rich soils that define the distinctive characteristics of the historical local grape varieties.
The experience moves from the fields into the heart of production with a guided exploration of the wine cellar. Inside, traditional aging practices are combined with modern winemaking precision, showing how the harvested grapes transform into highly sophisticated wines. Guests receive exclusive access to the drying loft, a vital space dedicated entirely to the traditional Appassimento technique. This room hosts the harvested Corvina, Corvinone, Rondinella, Croatina, and Oseleta grapes for several months out of the year. As the grapes rest, they slowly dry and lose water weight, naturally concentrating their sugars and complex flavors to lay the rich foundations needed to achieve the bold profile of authentic Amarone.

After exploring the production facilities, the culinary portion of the experience unfolds at Locanda Buglioni, the welcoming wine restaurant located directly on the estate grounds. Guests are invited to sit down for a seasonal, five-course tasting menu curated specifically to showcase regional culinary traditions. Every dish is paired with a distinct wine from the estate, leading the palate through a professional food and wine pairing. The wine lineup spans a wide range of styles, beginning with the crisp notes of Il Disperato Bianco Trevenezie IGT and the fine bubbles of Molì, an unfiltered classic method zero dosage sparkling wine.
The selection advances into the full-bodied red expressions of the territory, featuring Il Bugiardo, an organic Valpolicella Classico Superiore Ripasso DOC. The true centerpiece of the meal arrives with Il Lussurioso, an intense and powerful Amarone della Valpolicella DOCG that captures the full depth of the dried grapes. The tasting concludes on a sweet note with Il Narcisista, an organic Recioto della Valpolicella Classico DOCG dessert wine. Led throughout by an expert guide named Fabio, this estate visit connects historical agricultural heritage with modern dining, providing a profound understanding of a Buglioni Amarone Valpolicella wine tasting dinner.
