Cisternino is a truly enchanting villagein the Itria Valley of Puglia. It’s often hailed as one of “The Most Beautiful Villages in Italy” (Borghi più belli d’Italia) and holds an “Orange Flag” from the Italian Touring Club for its tourism, hospitality, and environmental excellence
Cisternino is a romantic village nestled on a hill and surrounded by woods. Perched on a hill, Cisternino offers breathtaking views of the surrounding Itria Valley, a picturesque landscape dotted with olive groves, vineyards, and the iconic trulli (conical-roofed dry stone huts).
Get lost in the narrow streets of one of the “most beautiful villages in Italy” and then cycle to a rare place where a winery and an oil mill coexist.
Its historic center is a maze of narrow, winding alleyways, whitewashed houses, and charming archways, often adorned with colorful flowers. It has an almost “oriental” feel, hinting at past Turkish influences.
The best way to experience it is to simply get lost, wander without a map, and discover its hidden courtyards, small piazzas, and beautiful architectural details. Cisternino’s old town is a masterpiece of “spontaneous architecture,” built organically by masons and stonemasons over centuries, creating a harmonious and captivating environment.
Learn all the steps of processing grapes into wine and then continue to the oil mill.
Discover how olives become extra virgin olive oil.
Visit a breeding with donkeys of Martina Franca, cows and other animals.
Finally, enjoy an aperitif made with 3 glasses of wine produced on site and Apulian friselle doused with evo extra virgin olive oil. Friselle with extra virgin olive oil is a quintessential taste of Southern Italy, particularly from Puglia, Calabria, and Campania. It’s a simple, rustic, yet incredibly satisfying dish that highlights the quality of its few ingredients. Friselle (also called frise, freselle, or frisedde) are a type of twice-baked bread (similar to a rusk or a very hard bagel) usually made from durum wheat flour, water, salt, and yeast.
